THE INTERVIEW

Q. What does your work at Five Group involve?

Ike-san(Hayato Ikeda): The department’s official name is Product Management. My main focus—the biggest part of my work—is purchasing and logistics. I look after purchasing, food cost ratios, and quality across Five Group, B-Kyu Gourmet Kenkyujo, and Pancho.

I also handle product approval and food safety education, checks, and improvements. So, broadly speaking, there are three main areas: food safety, purchasing and logistics, and product approval.

I’m in my 17th year at Five now. I’ve been doing this work since I joined. The company was smaller back then, so I also worked as a supervisor in the field.

Q. Do you still develop the dishes yourself?

Ike-san(Hayato Ikeda): For a new concept or something new, I’ll do development if I’m asked. At existing restaurants, though, the supervisors and head chefs generally take the lead. I review and approve what they’ve done, suggest changes, and say things like, “It would be better if you did it this way.”

If they really can’t get something to taste right, I’ll step in. But for the past three years or so, I’ve decided not to do the development myself as a rule. If I keep doing it, they won’t grow.

Ike-san(Hayato Ikeda):

THE INTERVIEW

Q. Where do you begin when developing a new concept?

Ike-san(Hayato Ikeda): First, I ask to see the concept and listen carefully to what the team wants to do. As different elements are added, the thing I care about most is whether it all holds together.

It’s like a piece of writing. There’s a beginning, a middle, and an ending. If they don’t connect, something feels off. A restaurant concept is the same.

Ike-san(Hayato Ikeda):

Q. What tends to make you feel that something is off?

Ike-san(Hayato Ikeda): You can make an endless list of things you want to do. But are those things what guests actually want? Are you really thinking from their point of view? That’s where I tend to have questions.

If we can work through those inconsistencies, we talk, make changes, and bring the concept together. If we can’t, there are times when I say, “I don’t think I can take this on,” and step away.

Ike-san(Hayato Ikeda):

THE INTERVIEW

Q. How do you judge whether a dish works as a product?

Ike-san(Hayato Ikeda): Across Five, the question we all share is, “Do you want to eat it again?” And I take that a step further: would you go back and pay to eat it again with your own money?

If you ask, “Is it good?” almost everyone says yes. But when good is the starting point, you have to go beyond that. Guests think, “I want to go there,” choose a restaurant, and take money out of their own wallets.

Would I really make that choice in my own time? It’s easy to say, “Yes, I’d go,” but does it truly stand up to that question? Something being delicious doesn’t necessarily mean it will sell. Being able to look at it honestly and without bias is a big part of it.

Ike-san(Hayato Ikeda):

04

THE INTERVIEW

Q. What matters when you look at the menu as a whole?

Ike-san(Hayato Ikeda): An izakaya, especially, is a collection of 50 or 60 dishes. Each one needs to be thought through. There are different kinds of deliciousness—bold flavor, for example—so you need to be clear about what each dish is offering.

As we build the menu, I try not to leave anything that feels off unresolved. How do we bring it all into balance? When you’re developing a new restaurant concept, that can take three or four months of trying things over and over again. It isn’t easy.

Ike-san(Hayato Ikeda):

THE INTERVIEW

Q. How did the idea for LaLa begin?

Ike-san(Hayato Ikeda): Before deciding what kind of restaurant it would be, LaLa started with the idea of a place where women could thrive. Being able to really engage with guests was part of that starting point.

I remember we talked about all sorts of things, though now I’m thinking, “What did we talk about?” (laughs). The idea changed so many times in a short period. Tac and I kept talking, and eventually he came back with the decision to go with Maki-Kushi.

Then we discussed the different skewers and how to present them. Of course, we couldn’t lose sight of the guests we wanted to reach or the target spending per guest. We had to build it with those things in mind.

Ike-san(Hayato Ikeda):LaLa

Q. Do you still feel uncertain once the concept takes shape?

Ike-san(Hayato Ikeda): Honestly, I always do, and that isn’t just with LaLa. How guests will behave is a forecast. A forecast is only a forecast, and the actual result can be very different.

The next part of the work is figuring out how to close that gap. That’s where we are now.

06

THE INTERVIEW

Q. When does this work feel rewarding to you?

Ike-san(Hayato Ikeda): Enjoyment… let me think. I suppose it’s when, three or four years later, a restaurant has become really successful.

It isn’t work where you can expect an immediate result. When I take on a project, my work is to create it. The people who put the soul into it after that are the operations team.

There can be a big gap before you see the result—three or four years before a restaurant becomes a place with a constant line of guests. People naturally want results quickly, so it can feel like work that doesn’t get recognized. But if you keep going, feedback from that work comes back to you every year.

Maybe I’m a bit unusual, but I don’t get too caught up in that recognition. I think that may be why I’ve been able to keep doing it.

Ike-san(Hayato Ikeda):

THE INTERVIEW

Q. What is different about developing products in Japan and Hawaii?

Ike-san(Hayato Ikeda): One thing I look at is whether we can recreate the product locally within the intended price range. We need to avoid taking something affordable in Japan and turning it into an expensive item in Hawaii.

So the question is whether we can make something that fits the brand’s original concept, including its price. That’s something we have to think through.

Ike-san(Hayato Ikeda):

08

THE INTERVIEW

Q. Where have you seen Funergy grow since you first became involved?

Ike-san(Hayato Ikeda): I feel that the values Tac cares about are starting to take root more widely in the company.

I also think it’s important to take part in outside learning programs and get fresh perspectives. Sometimes we get stuck in our way of thinking.

At those times, something you learn outside can make you stop and ask, “What really matters?” It can become a turning point. I think that kind of opportunity matters too.

Ike-san(Hayato Ikeda):Tac

09

THE INTERVIEW

Q. What do you most want to hold on to in building restaurants?

Ike-san(Hayato Ikeda): When we accept a guest’s money, can we do that with confidence, with our heads held high? I think that matters a great deal.

I’ve been coming to Hawaii for ten years, and I feel there are things Japan and Hawaii have in common. In Japan too, new restaurants seem to have shorter lives. Some companies take the view that if they recover their investment in three years, they can move on to something new.

That may be a valid business approach. But at least for Five Group and Tac, I think we share the aim of creating restaurants that can keep going and remain loved for ten or twenty years.

It is a business, but there’s also something beyond that. I want to keep valuing the effort we put in as people running restaurants.

Ike-san(Hayato Ikeda):

10

THE INTERVIEW

Q. Finally, what are you looking forward to?

Ike-san(Hayato Ikeda): For LaLa, it’s about building on what we’ve started.

And I hope Funergy and Five Group will both keep growing while making the world a more enjoyable place.
